For a while, I was banned from using the stove after I started a small kitchen fire. Luckily for everyone, I’ve gotten better at not starting fires.
When it comes to baking, it’s hit and miss for me. I’ve had more than my fair share of misses including burning things, having things stick to the pan, forgetting ingredients, missing steps, timing things incorrectly, well you get the idea.
I still love to bake though, especially around the holidays I just like it better when it actually comes out right (and edible). There are a handful of foolproof recipes that I’ll be whipping up this season and the best thing is that they’re all super-easy.
So when Pam Cooking Spray sent me some goodies (see below) and asked me to share a recipe with my readers, I knew exactly which one I wanted to make.
Years ago, I discovered the Cake Mix Doctor cookbook series and have been a fan ever since. Hey, I’ll take any shortcut I can as long as the end result is yummy.
One of the recipes I’ll be baking for the holidays is what I like to call the Easiest Berry Crisp Ever! It turns out great every time I make it and it is honestly the easiest thing you’ll ever bake.
2 packages of frozen berries or your favorite fruit
1 stick of butter
2/3 package of yellow cake mix
1. To start, lightly coat your pie dish with Pam Cooking spray. I used the Baking spray for this recipe and can I just say that I love Pam Cooking Spray’s “99% less residue” product line. It makes baking that much easier when you know that your food won’t stick to the pan or that your pan won’t be impossible to clean afterwards. Plus it has zero calories.
2. Next, pour your frozen berries into the pie dish and spread them evenly. For this recipe I was using a large Le Creuset pie dish, so I used 2 packages of frozen berries, but you can adjust accordingly depending on the size of your pie dish.
3. Finally, sprinkle your cake mix over the frozen berries and layer pieces of butter on top of the cake mix. Repeat the process again until you’ve completely covered the berries.
4. Once that’s done, pop it in the oven for 30-60 minutes or until the cake mix and butter have turned golden brown. Let it cool and serve with a scoop of vanilla ice cream for an extra-special treat.
And that’s it! No mixing, sifting, kneading or any other fancy baking term you can think of.
The holidays are stressful enough without having to worry about whether your recipe is going to turn out right or not. That’s why I always opt for easy recipes with as few ingredients as possible. The fewer ingredients, the less likely you are to forget something or mess it up, right?

My favorite holiday baking tip involves using Pam in my bundt pan for making apple bundt cake and spray the edge of your knife with pam when chopping up dried fruits and nuts won’t stick as bad..
My holiday baking tip would be to make sure you make sure to use time management! I have to write things out so I know when things go into the oven at what times, that way I dont end up putting 2 things in there to cook since it can make the time go longer and make things taste weird!

Always keep non stick pray around and/or butter and eggs. Something always uses those items.
Use the freshest ingredients possible and make sure you have all of the necessary ingredients before you start to make the recipe.
My tip: If you are doing a lot of baking or cooking, clean as you go so you are not overwhelmed with dishes, pots and pans.
My favorite tip:
Always use real extracts like pure Vanilla when baking instead of artificial extracts if you want the best flavor. In the past I’ve been disappointed when using artificial flavors in cakes ect.. Artificial extracts may be less expensive but they just just don’t match up to the real thing. Never compromise flavor for cost.
When making cupcakes or muffins, an ice cream scoop works best for putting them in the baking pan!
My tip is to make food ahead of time!
During the holidays, it seems like we are always getting invited to things at the last minute where we, or our kids, have to bring a treat. For me, the fastest treat I found is No-Flour Peanut Butter cookies. It’s so simple I have it memorized: ONE cup peanut butter, ONE cup sugar, ONE egg, ONE tsp. vanilla. Mix all together, scoop by spoonful onto baking sheet and cook for 9-12 minutes at 350. This simple tip has saved me much stress on many occasions.
My tip is that I freeze my cookies when completely cooled and than I can make them earlier and they taste the same as if I didnt but I am not rushing before christmas to get everything done at the same time.

My best tip is to plan what you are going to make in advance so that you know how much time you have and so that you have all the ingredients to hand.
I would say to start as early as possible to make the day less crazy.
before you do anything assemble all your ingredients - measure everything and then start. You don’t want to be half way into the creation and find you don’t have 1 necessary ingredient!
And DO NOT forget to “grease” the pan with PAM …. makes for easier and nicer presentations!

My holiday baking tip is be prepared and get it done early if possible.
My favorite tipis to bake as much ahead of time as possible and freeze your baked goods immediately. I will often take 3 or 4 weekends to do nothing but bake cookies and pies. It makes it so much easier than trying to do everything last minute.
plan and time things ahead of time so they come out warm and fluffy. and so you don’t burn them!
