Ingredients:
Corn Tortillas
Refried Beans
Shredded Cheese
Guacamole (optional)
To crisp up the corn tortilla you can fry them in oil or bake them in the oven. I prefer the oven bake method. Just spray both sides of the tortilla with cooking spray, sprinkle with a touch of sea salt and bake at 375 degrees for 15 minutes.
Warm up your refried beans over the store or in the microwave and spread the beans over the tortilla. Add cheese over the beans. You could also add on your choice of veggies - tomatoes, lettuce, onion, etc.
Finally, top with guacamole. I’m not a big vegetable eater, in fact, I don’t even really like the taste of lettuce. So I try to get my vegetables in through things I do like… like guacamole. 🙂
You can make just a couple tostadas for yourself or make a bunch for a big family dinner, potluck or party. It’s easy to throw everything together and because the recipe is so simple you’re almost sure to have all the ingredients on hand already.
